Petite ramen, chawanmushi, aubergine dengaku, oyster katsu. Blue fin sushi in Classic or Kokin style (smoked sushi rice). Wood-fire tuna kama, Japanese wagyu short rib. Cooked over cherry wood and binchotan charcoal, selected each morning, served each evening.
